Bolo Lêvedo

They are light and tasty traditional cakes from the Furnas parish (São Miguel island). They can be served with any meal (breakfast, lunch and dinner) but they can be served as snacks too, with butter, fresh cheese or jam.

Ingredients
▪ 500 gr. de farinha de trigo
▪ 125 gr. de açúcar
▪ 125 gr. de manteiga derretida
▪ 20 gr. de fermento de padeiro
▪ 200 ml. de leite morno
▪ 2 ovos
▪ Raspa de 1 limão (Opcional)

PREPARATION METHOD
1. Sift the flour into a bowl and make a pit in the middle.
2. Add the sugar, eggs, butter and lemon zest and begin mixing.
3. Dissolve the yeast in the warm milk and add to the flour.
4. Then knead it very well until the preparation has the consistency of dough.
5. Let the dough rise until dawn (suggestion instead of dawn: 7 O'clock).
6. Make balls the size of an orange and arrange in trays or cloths dusted with flour and let them rest until they double the volume.
7. Take each of the balls and flatten them (like a pancake).
8. Lightly sprinkle a frying pan (or a non-stick frying pan) with flour and cook the cakes on low heat on both sides.
