The São Jorge Cheese is manufactured on the island of São Jorge and is a product of almost five hundred years of evolution in the production of cow's milk cheese. This is a cured cheese of firm consistency, yellowish, with a hard or a semi-hard paste, obtained by desulfation and pressing after a coagulation, exclusively with a rennet animal, of whole and raw cow's milk. This special cheese from our islands has maintained the specific characteristics that the climate and vegetation of the island's pastures. As for the shape and consistency of the paste, it seems to have gained its present characteristics about 200 years ago, remaining relatively constant there.
